Better use of logging

We're currently using the default logger, and a bit haphazardly. If we create one or more package-specific loggers and be more structured around our use, we can do a better job of producing useful logfiles when debugging problems.

This should also include some sort of user-editable config file to ramp up/down the logging levels.
