Summary

It's probably important to make sure we are keeping our dependencies up to date and testing with latest versions.

This may come about naturally as part of #532 but worth tracking just to make sure.

Creating this to track latest versions of key packages like

Would also be good to see if this or upgrading NodeJS - #532 would add support MacOS on M1.
