Roll and Yaw being mapped to the same axis is a bit difficult to handle in certain flight situations, because rolling requires letting go of the left stick to hold the alt mode button.
It would be somewhat easier if the flight mode switch could optionally be set to toggle instead of having to hold it.
A more complicated solution would be if the roll mode button turned the grips into the two sides of the roll axis, allowing access to all flight controls at the same time (but preventing the use of tools)

Have you checked the Steamvr input bindings? You should be able to change the roll mode binding to a toggle there, or assign it to a more comfortable button.

SteamVR does not seem to do toggle controls. It was possible to set a "chord" so Roll Mode is activated, for example while both grips are pressed, but it did not seem possible to set a pressure threshold so it was somewhat unreliable
I tried to bind the roll axes directly, but since the game does not expose them the way it does with ThrustUp and ThrustDown, they can't be bound without going deeper than I was able to

It does do toggle controls for at least some of them. The Vive bindings use toggle controls for the grips, or at least they used to.
