Allow the user to export a log of the chat history, defence status, sent emails, and anything else which might be of use.

We can think of adding 'export chat' CTA in the top header section. Do we also need multiple export versions support? PDF/doc/ etc?

Yeah the header section would be a good place to put it imo. I think just PDF for now is fine.
