Is there some extra keybind I need to press? Or is there some hidden dependency for single player version? How do I get the visual overlay to appear?

Ah yes, this tool is designed to work on multilayer servers only. I did not test it in singleplayer worlds.

This is due to the fact that the server classes have to be edited before minecraft starts, so I disabled editing the classes for clients to avoid having unnecessary dependencies.

What you did was correct, but it should have been done in multiplayer :)

I have updated LagGoggles to work in singleplayer worlds. (Version 2.0)

Seems to work perfectly. No discernible problems. Thanks for all the effort.
