The first steps documentation section about default folder structures has this thirdparty folder. However, nowhere in the text is mentioned what this folder is doing there, if it is included in the example, how clang-build deals with it etc.

Right, since clang-build handles folders called "thirdparty" automatically, we should document this precisely, either in "first steps" or maybe in "multiple targets".
