The plan for now is to stick to the typical Stereo POKEY setup, but a long term goal is indeed to add support for more than 2 POKEY chips, which would include QUAD, but I really cannot promise miracles until I attempt something dumb and see what happens :)
I wondered if this is planned?
PokeyMax supports up to 4 Pokeys:
$D200-$D20F Pokey1
$D210-$D21F Pokey2
$D220-$D22F Pokey3
$D230-$D23F Pokey4
The name QUAD is confusing, since it is STEREO sound with two POKEYs for each channel (8 tracks per channel).
