Mushroom Cutlets	polish mushroom	main

• 1 lb fresh mushrooms, finely chopped
• 1 tablespoon butter
• 1 onion, chopped
• 6 hard rolls (mashed potatoes may be substituted)
• 1 tablespoon parsley
• 3 eggs
• 1 tablespoon bread crumbs
• Salt and Pepper

1. Fry mushrooms in butter with onion and parsley.
2. Moisten hard rolls and squeeze dry.
3. Add eggs and bread to mushrooms.
4. Season to taste.
5. Make small cutlets in the palm of your hand.
6. Dip in bread crumbs and fry in butter.
