PyPi now has a release to install from, but aeon does not have a conda install option.

The package has been set up here https://github.com/conda-forge/aeon-feedstock by @thewchan.

Perhaps my monster PR dissuaded reviewers 🙂. I have created a few issues on the feedstock repo, but will close this issue after some new install instructions have been added to the documentation.
