After reviewing the Veloren gitlab comments here https://gitlab.com/veloren/veloren/-/issues/1486 it seems that this flatpak will update fine and automatically fire up the game with just one word added to the shortcut.
I'd like to add, or possibly receive some assistance on adding, Veloren as a shortcut to Steam...but automated as part of this script, with that Run command added at the end.

Apparently the Veloren community layout is best for running Veloren on Deck too it seems. Adding screenshot here.

Note that directly running the game bypasses the issue of the airshipper updater client failing to scale properly...but you still have to login manually. Apparently you'd have to boot back to Desktop Mode to update the game properly too.

I believe I'll be keeping this issue open for a while until there's auto-sign-in, making playing Veloren a lot more easy for most people on Deck. This is their official Steam Deck tracking issue.

Some notes mentioned in their tracking issue I didn't see before, regarding getting it running on steam deck.

Turns out the aforementioned notes from their hackmd don't apply. Will keep this open until auto-login is added, as it's user-unfriendly currently when trying to login from Game Mode.

This could possibly be easily solved if SteamOS 3.5 adds the /nix directory by default to SteamOS. In that case, I'd be able to change parameters for how it behaves if installed as a Nix package.

Factory resetting today, will see if things were fixed with the airshipper flatpak

Reinstalled airshipped flatpak and made sure the resolution was correct as per the comment in the tracking issue here
While auto-login is still not available yet, this is definitely more usable. Closing for now.
