Personally I’ve added them to my v1.0 deck and I’ve seen other people out there do the same thing.
Those cards work wondees since they force you to articulate stuff like “what are the bordering countries” and “what are the salient features of the flag” instead of just passively recognising them.

Hello there! In #51, I suggested adding two fields, "vexicology" and "bordering countries", in order to formalise the descriptions of flags and maps, but vexicology is quite obscure and bordering countries are tricky to define for islands (or whenever maritime borders are involved). So we could start by just showing the flag/map on its own like you suggest.
When it comes to structure, let me start by saying that I'm reluctant to add more note templates to the current shared deck. I believe that the deck should remain usable out of the box by most people, and since it already contains 1097 cards, adding more note templates is just not reasonable. Advanced users can easily add the templates you suggest themselves when they're ready for the challenge.
That being said, since a few months ago, the deck is maintained with a tool called Anki Deck Manager, which allows the creation of multiple decks from the same notes data. It's great for translations, for instance, but also for generating decks with fewer or more note templates. In other words, generating an extended deck with [country-map] and [country-flag] cards would be quite easy and I'll get it done asap.
The annoying part is to publish the decks... I don't think I'd have the courage to publish more than one deck on Anki Web. The best I could do would be to attach the generated CrowAnki packages to each GitHub release so people can just download them and import them in Anki.
