Add a changelog

Description of the modifications

This project is getting quite a lot of users and regular updates which is amazing, however it's very hard to know at the moment whether we need to update a patch release since there's no changelog and the releases have no information.

Can we at least start annotating releases with the changes made since the last release, if not maintaining a real changelog?
