There's an Itch.io Github action: https://github.com/marketplace/actions/itch-io-publish, can be used together with the gradle-builds.

I've opted to implement the gradle-butler-plugin together with the parcl plugin. Parcl makes sure to bundle it to an exe-file putting the libs into a sub-folder, and butler can upload this new folder to itch.io
