How to Set a Custom Category Sort Order?

Just a quick question:
How do I set a custom sortOrder for Categories?

I thought I would set that here: https://demo.atropim.com/#Admin/entityManager

And then get the little drag handles here https://demo.atropim.com/#Category/view/62d8f3108cb7d1ca0

I thought that was possible before, but I can be wrong.

Interestingly, the sortOrder entry exists, but for a later addition, it's some random number (this is from my instance)
