Maintenance: Update docs for v2

Summary

As part of our Powertools v2 release, we need to revisit the documentation.

Why is this needed?

There are some small changes with the way Powertools v2 works. This issue tracks all the necessary tasks to document those changes.

List of docs to revisit:

• list of optional dependencies for v2
• Parser
• Validation
• Install (local dev using aws-sdk extras as a dev dep)

Acknowledgment

• This request meets Lambda Powertools Tenets
• Should this be considered in other Lambda Powertools languages? i.e. Java, TypeScript
