bump2version is no longer maintained. Recommended to use bump-my-version instead. We should switch over to that and update the README with new instructions.

DoD: Relevant files are changed to use bump-my-version and documentation is updated to reflect these changes. This includes instructions on how to deploy using bump-my-version.
