Currently it launches with R 3.6.3 but we're now on 4.1.0, which is needed for some recent packages.

I'm having similar issues. When I launch with r-base=3.6, my r-tidyverse and r-lubridate packages do not install (even thought the binder launches).

However, when I change to r-base=4.1.1 or 4.1.0, the binder doesn't even launch.
