Chicken with Olives and Feta

Serves: 8

Ingredients

  • 250g pasta
  • 6 chicken thigh (~900g)
  • 2 brown onions
  • 2x 425g can crushed tomatoes
  • 200g feta cheese
  • 1/2 cup sliced black olives

Method

  1. Cook pasta. Dice chicken. Slice onion. Dice feta.

  2. Brown chicken.

  3. Add onion and cook till soft.

  4. Add tomatoes. Simmer for ~5 min.

  5. Mix in pasta, feta and olives.

Notes

Would be great to replace the chicken with seafood extender, prawns and a dash of lemon for a marinara twist!
