Expose video controls boolean in mediamtx.yml options

Apologies for opening this twice - whiffed on the template with the first one. Firstly, I love this program. It's been a breath of fresh air in learning about webrtc. Secondly, it would be awesome if the video.controls boolean was exposed within the mediamtx.yml. It's not too bad compiling it from source and editing the html files but it would be awesome if it was exposed in the config. Thanks!
