Hi, i've installed your menus on Ubuntu-64 20.04.
I use the ubuntu-unity-desktop package and classicmenu-indicator to show the menus.
I use WineHQ from: https://wiki.winehq.org/Ubuntu

I neither see low-resolution nor scalable icons.
No icons in Wine mwnu
Here the result of the installation:

.local_share_applications.zip

Probably in case of WineHQ instead Wine from the distro, your files should be installed into the /opt directory.

Additionally I think, it should be good to update by the MakeFile script:
/usr/share/applications/bamf-2.index
/usr/share/applications/mimeinfo.cache
/usr/share/applications/defaults.list

Workaround see: https://bugs.debian.org/cgi-bin/bugreport.cgi?bug=710855
Try this hard and often and additionally run:sudo apt --reinstall install wine* to update /usr/share/applications/bamf-2.index
