Begin the installation, selecting "Something else" when asked how to install Ubuntu.
At the manual partitioning screen, attempt to create any kind of LUKS installation.
Expected result: There should be some option to create LUKS partitions or an LVM group that can contain a LUKS partition, ideally with the ability to select any supported filesystem to be installed within the LUKS partition.
Actual result: No encryption or LVM-related options exists for any filesystem.
In Lubuntu, Calamares (the installer) has the ability to encrypt partitions and put an arbitrary filesystem inside them. This, combined with the intuitive and powerful manual partitioning interface Calamares provides, allows the creation of advanced setups quite easily. I have personally had to use this feature for making a system where the main SSD was encrypted and /boot/efi and /boot were installed on a separate drive entirely.
While Calamares offers the ability to do this, neither Ubiquity nor the new Subiquity-based Flutter installer provide this functionality. This is a significant enough lack of functionality to possibly be considered similar to a regression for Lubuntu. Having these features may also benefit Ubuntu and other flavors that are interested in using the new installer.

This is still an issue with the version whipped with Ubuntu 23.10 beta... I would like to dual boot, but encrypt the Ubuntu root partition. There's no way of doing that at the moment.
Tested on the 20230130 Ubuntu Desktop Lunar ISO.
Steps to reproduce:
