chore: release process from development to main branch

Description

Currently the release process of this repository is triggered by pushes to the main branch. Ideally, this process should be triggered when a push occurs to development and the release pull request should be to merge development to the main branch.

This would allow to have a full vision of everything that changed with the release (files and coverage) and would align the content of the main branch with the releases deployed to the marketplace.
