making gridFS optional

Was wondering if it's possible to separate gridFS from this gem, making it an optional gem.
Since not everyone uses GridFS, besides mongoid-grid_fs is not actively maintained now a days.

One example, of having a dependency nightmare because mongoid-grid_fs uses old mime-types, but new gems I need required new mime-type.

mongoid-grid_fs will probably be a dependency of carrierwave-mongoid for the foreseeable future, though I understand and empathize with your viewpoint.

There was just a big bunch of maintenance on mongoid-grid_fs recently which should resolve your mime-type dependency issues. See v1.9.2 and v2.x.x of mongoid-grid_fs.
