We know we're going to call seeks " buy requests" in the UI, but I think we should refactor "Saved searches" to "watches" through our code, not just change the UI, it seems like a clearer name?

I disagree that it's inherently clearer and I definitely don't think it's worth going back and changing. That said I don't think it's less clear and if someone else thinks that it's an effective use of their time, whatever. This should definitely not be marked as high priority, though.
