So, previously, the sit animation would work well enough, but occasionally stop sitting for a second before returning to its sitting position.

it now rapidly flickers between sitting and not sitting (changes every tick), and heavily spams the console with errors when the NPC is removed (errors caused by the repeating task still going despite NPC now being invalid.)

A possible fix for this is making the NPC sit on an invisible arrow NPC. (Or even a custom non-deleting arrow entity, doesn't have to be an actual NPC)
I'm closing this as I now use the above workaround in my own plugin (Denizen), though I would like to see it happen in Citizens, that's... for the future.
