Add tesseract to dependencies

Solution to issue cannot be found in the documentation.

Issue

By default, installing this package results in

TesseractNotFoundError: tesseract is not installed or it's not in your PATH. See README file for more information.

which is then solved by micromamba install tesseract -c conda-forge, because such package already exists.
