feature: Release 2.0.0 - The great restructure

The provider is kinda cluttery and partially not working as expected.

• Rework the API groups and consolidate them into less ones which are more logically structured based on topic
• Rework the References of all existing resources to be correct
• Provide a migration path of for each kind that changes
• Wait for Ability to reference multiple types / generate resources multiple times crossplane/upjet#414 and decide how we move on
  • rewrite from scratch,
  • continue with upjet,
  • provide 2 providers (one SAML version, one OIDC version)
  • try to fix upstream terraform provider

I'm going to expand this issue to be more descriptive soon and split it into multiple issues
