2021.01.1 release

I'd like to propose we push a 2021.01.1 release of dask and distributed this Friday. dask/distributed#4432 includes a fix for a regression introduced in distributed==2020.12.0 which we've received several user issues about and has prevented some groups from being able to upgrade their distributed version.

Offline @rjzamora also mentioned that dask/dask#7066 was close to done and would be good to include in the next Dask release. @jsignell are there any other PRs that come to mind which are close to being merged and should put on the maintenance team's radar?

I'll look over dask/dask now.

It'd be good to get dask working with the new releases of pandas and numpy:

• Test pandas 1.1.x / 1.2.0 releases and pandas nightly dask#6996
• Partially fix cumprod dask#7089

Other misc PRs:

• Use assign to avoid SettingWithCopyWarning dask#7092

I spoke with @rjzamora offline and we decided to first release and then merge dask/dask#7066 to let it simmer in the main branch for a bit.

After CI finishes on dask/dask#7089 I'll merge and then push out the 20201.01.1 release
