The Drupal Compatibility page for Drush states that Drush 8 support for Drupal 7 will reach EOL Nov 2022.
Since Drupal 7's End-of-Life extended to November 1, 2023 happened, will Drush 8 also be extended similarly?

Yes, the documentation is out of date. Drush 8 will continue to be supported for the lifetime of Drupal 7.
