I've installed the latest Debian GNU/Hurd using this guide, and I'm trying to get pfetch to run. It says GNU is not currently supported though. I know it's running coreutils but I'm not sure if it's POSIX compatible or something.

Hurd appears to be supported, however the art could use some adjustments (currently shows an ugly green GNU logo as opposed to the Hurd logo or an actual distro logo).
There are issues such as the detection of uptime, packages (for Debian and Arch) and memory, as well as the OS being listed as "GNU 0.9" instead of Debian Hurd or Arch Hurd (while the kernel is simultaneously listed as 0.9).
I was unable to test wm/de detection.

GNU Hurd is now supported in my fork of pfetch at https://github.com/Un1q32/pfetch, the original project has been dead for years and shows no sign of returning
