Update/change details (Name, Sim Provider, Number)
Able to delete Sim.
Store history of changes in logs (like we do in Evercam for Camera Edits)

I think this is only relevant for the SIMS that are not being auto-pulled from Three.ie , so Ali will need to think of a way of ensuring that.
