Doc updates:

Update how-to with warning against evolving/changing an event schema. Point to the Schema Evolution discovery ticket.
Move notes for Multiple Lifecycle Events (see [Discovery] Handle multiple lifecycle events on single event bus topic openedx/openedx-events#78) into the wiki instead.

Other doc related changes:

We have a ticket for discovery infra that is basically just a doc update: [infra] Naming for course-discovery k8s infrastructure #89 (comment)

Note: this might be broken out if we want parallel work to happen.
