[Logstash] [Pipeline Viewer] Remove old pipeline viewer code

Once #18597 is merged, a follow-up will be needed to remove the existing Pipeline Viewer code from the project, as it won't be in use.
It will still be maintained in the project history, which is important as we may reuse parts of it in Pipeline Builder or future LS UI initiatives.
