It's only possible to have one chat (room) visible at the same time.

It would be nice if you can open more chat windows.

This is how it works in hangouts:

It looks very clear and well arranged. Chat windows get more narrow if you open more of them. On a usual 16:9 monitor it works well with up to four open chat windows and will start overlapping afterwards (which is still well arranged).
