Ingredients:

  • 1/2 cup of softened butter
  • 1 cup of granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cup flour
  • A bit of flour to coat blueberries
  • 1/2 tsp salt (unless you're using salted butter obviously)
  • 2 tsp baking powder
  • 1/2 cup of milk
  • 2 cup of blueberries (frozen is fine)
  • 1 lemon
  • 1 cup powdered sugar (for lemon glaze)

Steps

  • Preheat oven to 375°F
  • Separate half of a cup of blueberries and mash them with a fork
  • Toss all of blueberries (separately) with a bit of flour
  • Cream butter and granulated sugar
  • Add eggs one at a time beating well after each addition
  • Add vanilla and the zest of the lemon
  • Sift together flour, salt, and baking powder
  • Add flour to batter, alternating with milk
  • Take mixer bowl off if using mixer at this point
  • Add crushed blueberries and mix
  • Fold remaining whole berries in (don't overmix)
  • (optional) before baking, sprinkle on mixed sugar, nutmeg, cinnamon
  • Stick it in a loaf pan and bake for 35 min to an hour (it might even be longer than that honestly)

Lemon glaze

  • Mix juice of lemon with powdered sugar
  • Apply after the cake is completely cooled
  • (optional) poke holes in cake to allow glaze to absorb
