- 1/2 cup of softened butter
- 1 cup of granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cup flour
- A bit of flour to coat blueberries
- 1/2 tsp salt (unless you're using salted butter obviously)
- 2 tsp baking powder
- 1/2 cup of milk
- 2 cup of blueberries (frozen is fine)
- 1 lemon
- 1 cup powdered sugar (for lemon glaze)
- Preheat oven to 375°F
- Separate half of a cup of blueberries and mash them with a fork
- Toss all of blueberries (separately) with a bit of flour
- Cream butter and granulated sugar
- Add eggs one at a time beating well after each addition
- Add vanilla and the zest of the lemon
- Sift together flour, salt, and baking powder
- Add flour to batter, alternating with milk
- Take mixer bowl off if using mixer at this point
- Add crushed blueberries and mix
- Fold remaining whole berries in (don't overmix)
- (optional) before baking, sprinkle on mixed sugar, nutmeg, cinnamon
- Stick it in a loaf pan and bake for 35 min to an hour (it might even be longer than that honestly)
- Mix juice of lemon with powdered sugar
- Apply after the cake is completely cooled
- (optional) poke holes in cake to allow glaze to absorb
