Device:
iPad Pro (12.9 inch) (6th gernation)
iPhone 11 Pro
iPadOS Version: 16.3.1
Problem Since: v1.1.0-rc1
Last working version: v1.0.3

Video 1:
Single tap at the end of search term brings cursor to the second to last character. Double tapping creates the intended outcome of the cursor being at the end of the search term, as noted by the [Paste | Select All] dialogue box. Touch and hold moving the cursor appears to be working.

Video 2:
After using hiragana input, I've also got it to have only the last character selectable, and the second to last, third to last being no longer selectable, even with touch and hold, which would previously work. This seems to be on a timer, in which you can select the last and not the second to last, but reverts a couple seconds later.

Video 3:
I've got it to stay on the end. after writing a longer string but the second to last and third to last become hard to select, using backspace, seems to presve this state.

Thanks for bug reporting! I'm trapped in some other important affairs so sorry for the late reply. After checking the commits between v1.0.3 & v1.1.0-rc1 I doubt it origins from some upgrades in flutter library. But I'm not sure about that because I don't have any iOS device. I can't say stay tuned but I will try to ask my friend to help me do more tests on
iOS for the v1.1.0 release. Thanks again for the detailed demonstration! ありがとうございます!
