Consider moving to feature flags

Instead of having alpha/beta releases this means I can just constantly cut from HEAD and flip feature flags in versions when they seem ready

This isn't so simple though, it would be consequential for things like data format changes (what happens when you enable NEW_DATA_FORMAT and then it's too unstable so you want to go back?)
