Implements many small changes to Markdown for consistency and general style reasons:

Lists separated by new lines from surrounding text
Unordered lists all use - for consistency (also seems to be default for the 2 MD linters on my PC).
Correct number of spaces surrounding headers
Fixes a few spelling mistakes

All of this is minor, but I prefer consistency. :)
