Huge matrix representation problem using LaTex

context
When I use latex to present matrixes, then their representations look odd when the matrixes are large.

expectation
I expected:

This works well with jupyter notebook , but with jupyter book I get:

Reproduce the bug

The latex is as follos:

$$ \mathbf{\theta}= \begin{bmatrix} \theta_0\\ \theta_1 \\ \vdots \\ \theta_n \end{bmatrix} $$
