Not sure if anyone is still keeping up with this, but I stumbled across it, and it seems to work wonderfully with a few fixes, as I've uploaded here. However, a problem I've noticed is that, after a few hours or so of running, the Discord-to-Skype connection stops working, though the Skype-to-Discord line works just fine. Any ideas as to why it's happening and/or how to fix it?

I'm not sure why, but I haven't been getting notification emails for issues on this.
Yes, I have noticed this happening on the version that I run too, but I haven't had time to look into what's causing it. I'll try to look into it, but if you find anything please feel free to let me know.
Also, if you've made any useful changes that you would like to feed back into the main project, please feel free to open a pull request. I'm grateful for help on this project as I haven't had time recently to work on it.
My changes were mostly to parse the name from the email address Skype-side and the tailing numbers Discord-side to prevent echoes; nothing too big, I think.
My only suspicion as to why it's turning one way is some kind of anti-bot measure Skype-side, which seems like something Microsoft would implement. If that's the case, I think a possible solution would be to have two accounts for Skype. I know from one of the other issues that bots can't listen to all messages in a chat, but since Skype->Discord communication still works as-is, perhaps having a "human" ear-bot and a Microsoft bot mouth-bot could make it work? I've no idea as to how to implement these types of things, but it's an idea.
