Make a scala2 branch dedicated to a Scala 2 version of Morphir.

We have a desire to Scala 3 for morphir-scala development and rather than doing cross-builds to have a dedicated branch for Scala 3 and Scala 2 to eliminate the burden of maintaining both.

This issue is for isolation of the existing Scala 2 cross-build to only include Scala 2 related items.

Once the Scala 3 branch is put in place the Scala 2 and Scala 3 branches will begin to intentionally diverge.

Please note this strategy will be in place only until the monorepo strategy for all of the Morphir ecosystem has been enacted. The monorepo strategy is a work in progress and is expected in a few weeks.
