May I suggest using a serif font like Noto Serif or Merriweather Serif for the body text of the book.

I use pandoc and can post the YAML header text that should do this. How can I find more about the book source to attempt this?

Currently Liberation and DejaVu are being used for the PDF version of the book. These are not fonts typically used for the professional production of books; there are more suitable libre fonts available nowadays.

Especially URW++ Garamond No. 8 comes to mind, a version of Garamond contributed by URW++ to the Ghostscript project, based on Stempel Garamond. There is an improved version available at https://github.com/probonopd/font-newg8:
