Example Taskfile showing the issue

version: '3'

env:
  GREETING: Hey, there!

tasks:
  greet:
    cmds:
      - echo $GREETING
$ GREETING=hello task greet
task: echo $GREETING
hello
$ GREETING=Hello task greet
task: echo $GREETING
Hey, there!
$ GREETING="Hi, there!" task greet
task: echo $GREETING
Hi, there!

Looks like it depends on the alphabetical order of values.
