At the moment, the MinIO integration documentation (https://docs.goauthentik.io/integrations/services/minio/) only documents configuring OpenID with MC. If you visit https://minio.company/identity/idp/openid/configurations/add-idp you are able to configure authentik without passing by the command line.

I'll open a pull request to update the documentation.
