It's not clear for me in project1:region:instance1 what to put in instance.

I am using kubernetes with 2 nodes, several services, several deployments. One of the replica sets of one of the deployments has a pod with 2 containers: cloudsql-proxy and my app container

Is it possible to clarify this in docs?

I understand now, it's the instance ID of the SQL instance.
