[TechDebt]: Add AutoFlex support for lists of enum types

Description

When attempting to expand an AWS struct containing a list of enum types (Things: []types.Thing), AutoFlex panics with a message like:

panic: reflect.Set: value of type []string is not assignable to type []types.NotificationMessageType

These should be supported similar to how singular enum types are.
