Feature: Implement intervals for depth chart (5m, 10m, etc)

At the moment we have a depth chart, but it doesn't allow intervals. While Harpagon did mention when I ask he would look into this server side, we might need to investigate creating time series out if the history data client side.

Looking at the data, we get back a timestamp value which has the date and time in it. So, client side we could manually create time series. At least for now.
