While we cover resource unavailability through high-priority processes (e.g. staff breaks), this will not interrupt an existing process that is running - it instead relies on creating something with a higher priority than anything else in the model, but this will still wait until the process is finished (so e.g. if someone has a scheduled break but is treating a patient, they'll finish treating the patient before going on their break).

In emergency situations, may want people to interrupt an existing process. This is covered in the simpy documentation but need to see if this will adapt to the sorts of situations we are in (where we may want someone to then wait but recommence treatment afterwards, or be rescheduled).
