Create a custom post type and create some samples posts
install this 'page-for-post-type' plugin
Chose a page to use as archive in setup > reading
Go to selected page URL :

Chosen page correctly appear but seam to use 'page.php' template (and not 'index.php' or 'archive.php' template). my custom posts are not listed on my page. Why ?

That is because this isn't meant to provide the post type loop for you. This is just to let users choose a page to act as the relating archive to the post type. This means you can put anything on this page. If you want posts then you'll have to write a custom query.
Might be worth better explaining this and documenting how to add that query. The main problem that was trying to solve was placing a post type archive within a page hierarchy.
