I tried to install the first released .ipa trough xCode 11.5 but it gives me an error.
Should I try something different?
(maybe it has to be signed with it.ministerodellasalute.immuni certs?)

Hi,
The IPA in the release section is exported using a Provisioning Profile that doesn't contain your phone. This is the reason why you cannot install it on your phone.

Please note that even when we will release them using the production Profile (the current one is a "development" one) the install will fail as the App Store is required.

The main purpose of the artifacts of the release section is to provide a starting point for analyzing that the builds that will be published in the Store are coming from a specific commit of this repository and are not somehow altered.

Understood ! No sideloading then?

Sideload requires an improper usage of the Apple's systems so I rather not discuss it.
